Product FAQs

1. How to Care for Knives on a Daily Basis

  • Hand Washing Is The Only Way to Go: The high temperatures, strongly alkaline detergents, and impact from the water jets in a dishwasher can severely damage the blade and handle.
  • Wash Immediately After Use: Rinse the knife immediately after cutting acidic foods (such as lemons or tomatoes) or foods with high salt content. Acidic substances can quickly corrode the blade, causing spots to appear even on stainless steel.
  • Dry Immediately: Do not leave the knife on a dish rack to air-dry after washing. Thoroughly dry the blade and handle with a clean cloth; this is the most effective way to prevent rust (especially critical for high-carbon steel knives).
  • Choosing a Cutting Board: Knives often become dull not from cutting food, but from striking a cutting board that is too hard. We recommend using wooden or high-quality plastic (PE/PP) cutting boards. These materials can moderately “absorb” the impact on the blade.
  • Avoid: Glass, marble, ceramic, or tempered glass cutting boards. These materials are much harder than the blade, and even a single cut can noticeably dull it.
  • Proper Storage: Avoid letting the blades knock against each other.

2. Daily Care for Wooden Cutting Boards, Knife Blocks, and Knife Racks

I. Cutting Boards

  • Washing and Drying: Hand-wash with warm water and a neutral dish soap. Never put them in the dishwasher, and never soak them in the sink. After washing, dry them with a cloth and be sure to stand them upright to air-dry. If laid flat, uneven moisture levels between the top and bottom surfaces can cause the board to warp or crack.
  • Deep Maintenance (Oiling): Every 1–2 months, when the surface of the cutting board appears white and dry, it needs to be oiled. Use only: food-grade mineral oil or specialized cutting board beeswax. Never use: olive oil, peanut oil, or other cooking oils. Over time, these vegetable oils will oxidize and go rancid, causing the cutting board to emit unpleasant odors and harbor bacteria.

II. Wooden Knife Block (Mold Prevention Is Key)

  • Prerequisite for Storing Knives: Only knives that are 100% dry should be placed in the knife block. Even a tiny bit of moisture on the blade can accumulate over time and cause mold to grow inside the block. Therefore, wipe the knives dry before placing them in the block. Clean the Slots: Every few months, turn the knife block upside down to remove dust and debris from the slots.
  • External Cleaning: Wipe the surface with a slightly damp cloth, then dry it immediately. Frequent oiling is not necessary.

III. Magnetic Knife Blocks and Strips

  • Handling Tips: The condition of the magnetic strip depends on how you handle the knives. When removing or placing a knife, flip it using the spine as a pivot so that the spine makes contact with the wood first, rather than letting the sharp blade slap or scrape directly against the wooden surface. This protects the blade and prevents deep scratches on the wood.
  • Daily Cleaning: Occasionally wipe the surface with a slightly damp cloth to remove dust and oil splatters.
  • Crack Prevention: If you live in a very dry climate, or when you’re oiling your cutting board, you can also apply a thin layer of mineral oil to the surface of the magnetic strip to maintain the luster of the wood grain.

3. The Effect of Blade Bevel Angle on Knives

Standard Bevel Angles for Kitchen Knives

Standard Kitchen Knives

Monolithic Steel: Chef’s knives (standard steel, such as 3CR, 5CR, German steel); the bevel angle for large knives is 25° ± 2, for small knives 22°–28°, and for fish knives 23°–30° (fish knives with excessively sharp edges may reach around 50°). Knives with serrated edges should be able to smoothly cut through A4 printer paper.

SG2 Steel Core, VC10 Steel Core: For chef’s knives and cleavers, the edge angle is 22° ± 2. For clad steel cleavers, the edge angle is 24°, 25°, or 26°. For utility knives under 5 inches, fruit knives, and serrated steak knives, the angle is 22°–28°.
Kitchen knife blades are 3.0 mm–4.0 mm thick (chef’s knives, Serbian style): the blade sharpening angle is 28° ± 2.
For blades with a clamped edge—such as the boning knives in the Pao series and two models of utility knives—the blade sharpening angle is controlled between 22° and 30°.

Outdoor Knives Blade thickness is 2.2 mm. Depending on the chef’s knife’s edge angle, the blade thickness is 3.5 mm, and the edge angle varies by application: the slicing knife has an angle of 34±2”, while the bone-chopping knife has an edge angle of 48°±2, capable of chopping beef shank bones.
Combined chopping and slicing knife: The blade thickness is 3.0 mm, designed for chopping at the front and slicing at the back. The sharpening angle at the front is 33° ± 2, and at the back is 46° ± 2, capable of chopping chicken leg bones and pork trotter bones (when measuring the angle, do not measure the middle, as this is where the angles of the two sides of the blade transition).
Blade Thickness for Common Materials The finished blade thickness for the large knife is 2.2±0.1 mm, and for the small knife, 1.8±0.1 mm.

The smaller the edge angle, the sharper the blade; however, it is also more prone to damage: when encountering hard objects (such as bones, hard wood, or sand), the blade is highly susceptible to chipping (curving or deformation of the cutting edge) or fracturing (cracking of the cutting edge). To achieve optimal performance, knives designed for different purposes are selected with the edge angle best suited to their specific use.

4. The Effect of Tool Hardness on Cutting Tools

If the “cutting edge angle” determines how sharp a tool is initially, then the “blade hardness” determines how long it stays sharp and what kind of damage it can withstand. However, higher hardness isn’t necessarily better; rather, it’s important to find a balance between hardness and toughness.

I. High Hardness (60 HRC and above)
Advantages:
Excellent edge retention; highly wear-resistant; remains sharp even after cutting a large volume of materials; requires infrequent sharpening; allows for a smaller bevel angle.
Disadvantages:
① High brittleness makes it prone to “chipping”; although hard, the steel is brittle. If the blade strikes bone, hardwood, or accidentally falls onto tile, a piece of the edge can easily chip off.
② Difficult to sharpen: The steel is too hard for ordinary whetstones to sharpen effectively. Once the blade becomes dull or chips, it takes a significant amount of time and specialized tools to repair it.

II. Low Hardness (Below 55 HRC)
Low hardness means the steel is relatively “soft,” but this is offset by extremely high toughness.

Advantages:
Good impact resistance; the blade is more likely to “curl” rather than “chip.” Because the material is soft, it is easy to sharpen.
Disadvantages:
Poor edge retention; it dulls quickly with even light use, requiring frequent sharpening, and cannot be sharpened to a small bevel angle.

Different steels have different standard hardness ranges: 3CR: 52–55°; 5CR: 54–57°; VG10: 58–62°

5. Distinguishing Between Damascus Patterns and Laser-Etched Textures

Key Distinguishing Features Authentic Damascus Pattern Laser-Etched Patterns
Examine The Cutting Edge The cutting edge features a smooth, solid steel core, and the pattern appears natural. The pattern may extend directly to the cutting edge, or the edge may appear extremely abrupt.
Examine The Knife Spine There are faint, layered parallel textures. Smooth and texture-free, indicating a solid, single-layer steel plate.
Symmetry of The Patterns on The Left and Right Sides The patterns on both sides are never symmetrical; rather, they are naturally formed. Often features perfectly symmetrical, mirror-image patterns.
Blade Grinding and Acid Etching Test Even after grinding away the blackened surface layer, physical texture remains visible after acid etching. The pattern rubs off easily, and the surface shows no change after acid etching.

AWESOME knives. Incredible value for a very, very nice 3 piece set of the most useful size/shapes.

Finally had occasion to use this knife tonight and it beats all my expectations. It is beautiful. I just let 'the knife do the work' and the super sharp blade made every task a breeze. I'm almost reluctant to use this it's so nice, will have to keep it put away except for special occasions or to beautify the room a bit. I highly recommend.

Outstanding Knives!

This knife handle is a work of art. My photo doesn't even do it justice. The handle is made of blue resin and burled wood. The knife has great balance. I was not previously familiar with Fintiso, but this knife is a new favorite to use in the kitchen.

Real chef knives

This knife is gorgeous! It has a nice weight and is comfortable to use. Its extremely sharp out of the box, and the dimples make food slide right off. Length wise, it seems bigger than my usual Santoku knives, but I like it, as its an in between size of that and a chef knife. Highly recommend this.

Medium Weight

My suspicion is that whoever designed this knife and brought it through all of the manufacturing process, to the end user now experiencing it, they really wanted one thing to be the end result. A truly impressive knife and a joy in the one so using it. They nailed it. Being a chef and a foodie, I have enjoyed having a bit of experience with a decent number of knives. These have also spanned the spectrum of style, type, quality, etc... Most tend toward the middle of the pack, with a predominance of one divide between them, setting them apart. Machine made or hand made. For the most part, nearly without question or variation, the hand-made knives tend to be superior. Better crafted, having more character, and most often simply having had chosen for them better steel and technique. There are surely outliers, but this tend to be a strong pattern. I consider that among the best of machined knives, they never rise above an 8 on a scale of 1-10, and that is accounting for the best and most expensive of them. They hand-made knives just can't be overcome. Well, if ever there was and is an argument for a machined knife to attain parity, it is this knife right here. This knife is simply gorgeous. Whoever designed it and put it to the factory design and engineering and process, they did an amazing job. The steel is simply superior. Strong, thick without being foolish. It's got a bit of a Damascus swirl in it, which is a delight to the eye, and likely is also providing that increased stability and touch and feel. The weight of the knife, its balance from the handle down the blade, is perfect. It's easy to rock on delicate jobs, and has all the power to push through the toughest. The handle not only looks gorgeous, but feels superb in the palm of the hand. The fit into the palm, nestling the fingers on the haft, feels like it was made just for my hand. The edge is honed, has no blemishes or flaws, and to me is of a perfect sharpness. Can it go sharper? Yes. Does it need to? Not with this weight and edge, not to me. Simply put, I would recommend this knife to anyone. Anywhere. Especially if they enjoy this Santoku style. Even though this is a machined knife, I give it a 10 of 10. It's perfect. For $80, I can't think of a better deal than this. I am thoroughly impressed.

Can be kept sharp at home

To start off this knife is beautiful, wood resin handling is lovely to look at. Normally, I'm not fan of handles that taper at the end, but this one gets flatter and wider where it tapers, so the ergonomics are still nice. The blade has kind of a faux damascus look to it and supposedly has an S35vn core with some other type of steel layered on top mainly for aesthetics. I'm a little bit of a pocket knife nerd and have gotten so far down the rabbit hole of knife steels and sharpening that I have a pocket microscope for checking blade edges. Looking at the factory edge, it definitely feels sharp, but seemed to have a quite a bit of a burr and uneven grind. A quick test on some pieces of apple still showed it was able to slice paper thin with little effort. The tip of my knife also arrived bent, as the end seems to have pushed out the end of the box in shipping. I did do a quick sharpening to see if I could straighten out the tip and even out the edge. S35VN is supposed to be a powder metallurgy super steel that is has epic levels of edge retention and hardness. But I was able to easily sharpen it on a diamond stone, even though these super steels are notoriously hard to sharpen. Overall, I really love Santouku style and design of this knife. Even if it's not really S35VN, it's more than sufficient for kitchen duty...especially if you can find it on sale with a coupon.

Excellent set of knives

I am blown away by this knife! It has what I think is the perfect weight, it cuts like an absolute dream, and I just feel like this should be the blueprint staple of all these knife sets out there on the market these days. And how could I forget as far as looks go......OMG it is a stunningly gorgeous knife that is for sure. I would love to get an entire set of chef's knives with a block for these. I could totally see this being the ONLY knives in my kitchen. Well worth every dime.

Great value for a 3-pc set of finely crafted Japanese-style Damascus steel knives.

This knife comes well presented and would make a nice gift for a budding chef. The balance between the handle and the blade is nice and better than I anticipated. The blade isn't cut-yourself-everytime-you-get-near-it sharp --- which we have experienced from Amazon knife sets before. So you have quite a bit of control still. The blade slices through nicely, but still needs a smidge of effort behind it which is where the translucent slices are lost. That being said, it takes direction well and would make a nice companion for a while. If you're looking for a gift for a CIA trained chef, I would keep moving. But if you're looking to elevate your game or present a good knife for a home chef, this will fit the bill well.

Excellent Knife Set, Worth The Money

This beautiful knife was sent in a specialized box that is inset with a foam covered in beautiful blue velvet lined cushion that fits the knife snuggly to prevent movement. The handle is so striking when you open the lid of the box. I do question the wood part of the knife. I don't know if it's really made of resin and wood. The whole handle sounds like plastic. (even the wood part) so if this is really made of Burl wood, it must be a super thin covering. It is absolutely gorgeous though. This is a heavy weighted knife and appears to be well balanced. It is extremely sharp and makes quick work of cutting, slicing, and dicing. Makes prep work easier. Easy to use and fit nicely in the hand with a very comfortable grip. Probably one of the sharpest knives I have owned. The blade is a smooth cut blade. Claims to be dishwasher safe, but I'm not sure that I would do so. We will have to see how well this stands up and how easy to sharpen the blade if it ever needs it. Makes a great gift.

My Favorite Damascus Knives!

A knife so pretty, I feel a bit bad even using it. From the mesmerizing handle, down to the beautifully crafted blade, this knife is a joy to view, hold, and use. The balance is exactly where you want it to be while slicing through your veggies, meats, fish, or whatever else you throw at it. I particularly like the scalloping on the blade, which are rectangular and smoothed out and not crudely ground down like my other knives. This provides an overall better result when cutting through ingredients like avocados or anything that tends to stick to the blade. The wood in the handle is a stunning, burled grain that blends so nicely with the 'water' resin, you'd think it was resin as well. Having see some satin finished burled wood on pianos, I lean towards believing it's real wood; time will tell. I'll conclude by stating how thoroughly embarrassed my old Santoku knife is at the introduction of this knew beauty. The old knife is now packing it's bags and headed back to Queasyfart HQ to rethink it's life.

Incredible cutting and slicing abilities

Slicing meat for beef jerky was much easier with this! And I love the handle. Due to the wood and resin, each one looks slightly different and unique. I was a little surprised that the pattern in the metal feels raised.
