Product FAQs

1. How to Care for Knives on a Daily Basis

  • Hand Washing Is The Only Way to Go: The high temperatures, strongly alkaline detergents, and impact from the water jets in a dishwasher can severely damage the blade and handle.
  • Wash Immediately After Use: Rinse the knife immediately after cutting acidic foods (such as lemons or tomatoes) or foods with high salt content. Acidic substances can quickly corrode the blade, causing spots to appear even on stainless steel.
  • Dry Immediately: Do not leave the knife on a dish rack to air-dry after washing. Thoroughly dry the blade and handle with a clean cloth; this is the most effective way to prevent rust (especially critical for high-carbon steel knives).
  • Choosing a Cutting Board: Knives often become dull not from cutting food, but from striking a cutting board that is too hard. We recommend using wooden or high-quality plastic (PE/PP) cutting boards. These materials can moderately “absorb” the impact on the blade.
  • Avoid: Glass, marble, ceramic, or tempered glass cutting boards. These materials are much harder than the blade, and even a single cut can noticeably dull it.
  • Proper Storage: Avoid letting the blades knock against each other.

2. Daily Care for Wooden Cutting Boards, Knife Blocks, and Knife Racks

I. Cutting Boards

  • Washing and Drying: Hand-wash with warm water and a neutral dish soap. Never put them in the dishwasher, and never soak them in the sink. After washing, dry them with a cloth and be sure to stand them upright to air-dry. If laid flat, uneven moisture levels between the top and bottom surfaces can cause the board to warp or crack.
  • Deep Maintenance (Oiling): Every 1–2 months, when the surface of the cutting board appears white and dry, it needs to be oiled. Use only: food-grade mineral oil or specialized cutting board beeswax. Never use: olive oil, peanut oil, or other cooking oils. Over time, these vegetable oils will oxidize and go rancid, causing the cutting board to emit unpleasant odors and harbor bacteria.

II. Wooden Knife Block (Mold Prevention Is Key)

  • Prerequisite for Storing Knives: Only knives that are 100% dry should be placed in the knife block. Even a tiny bit of moisture on the blade can accumulate over time and cause mold to grow inside the block. Therefore, wipe the knives dry before placing them in the block. Clean the Slots: Every few months, turn the knife block upside down to remove dust and debris from the slots.
  • External Cleaning: Wipe the surface with a slightly damp cloth, then dry it immediately. Frequent oiling is not necessary.

III. Magnetic Knife Blocks and Strips

  • Handling Tips: The condition of the magnetic strip depends on how you handle the knives. When removing or placing a knife, flip it using the spine as a pivot so that the spine makes contact with the wood first, rather than letting the sharp blade slap or scrape directly against the wooden surface. This protects the blade and prevents deep scratches on the wood.
  • Daily Cleaning: Occasionally wipe the surface with a slightly damp cloth to remove dust and oil splatters.
  • Crack Prevention: If you live in a very dry climate, or when you’re oiling your cutting board, you can also apply a thin layer of mineral oil to the surface of the magnetic strip to maintain the luster of the wood grain.

3. The Effect of Blade Bevel Angle on Knives

Standard Bevel Angles for Kitchen Knives

Standard Kitchen Knives

Monolithic Steel: Chef’s knives (standard steel, such as 3CR, 5CR, German steel); the bevel angle for large knives is 25° ± 2, for small knives 22°–28°, and for fish knives 23°–30° (fish knives with excessively sharp edges may reach around 50°). Knives with serrated edges should be able to smoothly cut through A4 printer paper.

SG2 Steel Core, VC10 Steel Core: For chef’s knives and cleavers, the edge angle is 22° ± 2. For clad steel cleavers, the edge angle is 24°, 25°, or 26°. For utility knives under 5 inches, fruit knives, and serrated steak knives, the angle is 22°–28°.
Kitchen knife blades are 3.0 mm–4.0 mm thick (chef’s knives, Serbian style): the blade sharpening angle is 28° ± 2.
For blades with a clamped edge—such as the boning knives in the Pao series and two models of utility knives—the blade sharpening angle is controlled between 22° and 30°.

Outdoor Knives Blade thickness is 2.2 mm. Depending on the chef’s knife’s edge angle, the blade thickness is 3.5 mm, and the edge angle varies by application: the slicing knife has an angle of 34±2”, while the bone-chopping knife has an edge angle of 48°±2, capable of chopping beef shank bones.
Combined chopping and slicing knife: The blade thickness is 3.0 mm, designed for chopping at the front and slicing at the back. The sharpening angle at the front is 33° ± 2, and at the back is 46° ± 2, capable of chopping chicken leg bones and pork trotter bones (when measuring the angle, do not measure the middle, as this is where the angles of the two sides of the blade transition).
Blade Thickness for Common Materials The finished blade thickness for the large knife is 2.2±0.1 mm, and for the small knife, 1.8±0.1 mm.

The smaller the edge angle, the sharper the blade; however, it is also more prone to damage: when encountering hard objects (such as bones, hard wood, or sand), the blade is highly susceptible to chipping (curving or deformation of the cutting edge) or fracturing (cracking of the cutting edge). To achieve optimal performance, knives designed for different purposes are selected with the edge angle best suited to their specific use.

4. The Effect of Tool Hardness on Cutting Tools

If the “cutting edge angle” determines how sharp a tool is initially, then the “blade hardness” determines how long it stays sharp and what kind of damage it can withstand. However, higher hardness isn’t necessarily better; rather, it’s important to find a balance between hardness and toughness.

I. High Hardness (60 HRC and above)
Advantages:
Excellent edge retention; highly wear-resistant; remains sharp even after cutting a large volume of materials; requires infrequent sharpening; allows for a smaller bevel angle.
Disadvantages:
① High brittleness makes it prone to “chipping”; although hard, the steel is brittle. If the blade strikes bone, hardwood, or accidentally falls onto tile, a piece of the edge can easily chip off.
② Difficult to sharpen: The steel is too hard for ordinary whetstones to sharpen effectively. Once the blade becomes dull or chips, it takes a significant amount of time and specialized tools to repair it.

II. Low Hardness (Below 55 HRC)
Low hardness means the steel is relatively “soft,” but this is offset by extremely high toughness.

Advantages:
Good impact resistance; the blade is more likely to “curl” rather than “chip.” Because the material is soft, it is easy to sharpen.
Disadvantages:
Poor edge retention; it dulls quickly with even light use, requiring frequent sharpening, and cannot be sharpened to a small bevel angle.

Different steels have different standard hardness ranges: 3CR: 52–55°; 5CR: 54–57°; VG10: 58–62°

5. Distinguishing Between Damascus Patterns and Laser-Etched Textures

Key Distinguishing Features Authentic Damascus Pattern Laser-Etched Patterns
Examine The Cutting Edge The cutting edge features a smooth, solid steel core, and the pattern appears natural. The pattern may extend directly to the cutting edge, or the edge may appear extremely abrupt.
Examine The Knife Spine There are faint, layered parallel textures. Smooth and texture-free, indicating a solid, single-layer steel plate.
Symmetry of The Patterns on The Left and Right Sides The patterns on both sides are never symmetrical; rather, they are naturally formed. Often features perfectly symmetrical, mirror-image patterns.
Blade Grinding and Acid Etching Test Even after grinding away the blackened surface layer, physical texture remains visible after acid etching. The pattern rubs off easily, and the surface shows no change after acid etching.

Ultra sharp

This knife is beautiful and has a lighter more balanced feel than my other knives. It is very sharp and very well made. It comes fully protected in a nice blue box, perfect for gift giving. Dont forget to add a penny for good luck if you give it as a gift. I am very impressed with the quality, the weight and the overall appearance. I have my knives on a magnetic strip on my kitchen wall, and this one will not only work well but look good while doing it. Very happy with this knife and its potential, Im so tired of false promises but this one has it all, nothing false going on here.

Beautiful Damascus Steel Knife Set

This 6-inch Damascus petty knife has quickly become one of my favorite kitchen knives. Right out of the box, the blade was incredibly sharp and sliced through fruits, vegetables, and meats with very little effort. The 67-layer Damascus steel gives it a beautiful look, but it's not just for showit performs exceptionally well. The size is perfect for all those smaller kitchen tasks where a larger chef's knife feels a bit bulky. I've used it for trimming meat, slicing vegetables, cutting fruit, and other prep work, and it handles everything smoothly. The blade feels well-balanced and precise, making detailed cuts easy. The G10 handle is comfortable to hold and provides a secure grip even when my hands are slightly wet. It feels sturdy and well-made, and the overall craftsmanship is impressive. The knife has a nice weight to it without feeling heavy or tiring during longer prep sessions. Overall, this is a beautiful, high-quality utility knife that combines excellent sharpness, comfort, and control. It's a great addition to any kitchen and feels like a much more expensive knife than its price suggests.

Classy Pro Look

These knives are super sharp. I read about that in some of the other reviews, but they really are. You need to be extra careful. The knives look great, and putting them on a magnetic holder is even better because it just looks cool. I think the price is well worth it and Im glad I got them. One of the meats I had a hard time cutting with a previous knife was the connective tissue of the flank steaks, but these knives just sliced right through it. Color me impressed.

My Favorite Damascus Knives!

This is a very nice and sharp knife. There is no case that comes with it so keep that in mind. It cuts meat very well but doesn't have enough weight to be used as a cleaver.

Great Product!

I guess you can guess from my title that this is a SHARP Chef's Knife. Yes. It. Is. Being the bonehead I am, I just had to run my thumb over the blade, and YES it cut me. I deserved that. This is a BEAUTIFUL knife. The photos don't do it justice. You almost feel bad using this piece of art, that you will hurt it or get it dirty. But I have already sliced onions, peppers, cabbage, and tomatoes. Normally I use a serrated knife to cut tomatoes, but used this new knife with awesome results. Use this knife to slice, use a sawing motion, and it delivers a thin, thin, thin slice of tomato. I also sliced some bbq chicken and it was like a knife through butter. Here is my only less than glowing part, and that is the thickness of the handle. As you can see in the photo posted that I LOVE knives and use a lot of them. So I can speak from amateur experience, I know knives. I have large hands or mitts, and this particular knife doesn't have the comfortable 'grip' of a knife with a bigger handle. For people with normal size hands this knife handle is perfect. My issue is NOT a problem with the knife, it's my issue and what I FEEL comfortable with. The balance of tis knife is spot-on and the sharpness is crazy good. PLUS it looks BEAUTIFUL. I just noticed that this knife is ON SALE. Now is the time to pick one up.

Perfect for the chef!

This is a very impressive looking and beautiful knife. It's very sharp and cut through my tomatoes like nothing. I have many knives, but I've never had one as beautiful as this one. It's solid and clearly has excellent craftsmanship. The list price of this knife is $120, but when I ordered it and now, while I write this review, the price is actually half that if you apply a coupon on the product page. I do believe this knife is worth a $60 price tag -- but I don't think it's worth the $120 list price. It's beautiful and works well, but I just wouldn't pay $120 for it. I do think this would be a lovely gift for a chef or an amateur chef. I'm enjoying using it.

Outstanding Knives!

This Chef Knife is a masterpiece in the kitchen. Its incredibly sharp, making chopping, slicing, and cutting effortless and precise. The 67-layer Damascus steel is not only functional but also stunning to look atthe craftsmanship really stands out and adds a touch of elegance to your cooking routine. The ergonomic G10 handle is a dream, providing a comfortable and secure grip that feels balanced and easy to maneuver, even during longer prep sessions. Whether Im dicing veggies, slicing meat, or tackling more delicate tasks, this knife handles it all with finesse. My takeaway: If youre looking for a professional-grade knife thats as beautiful as it is functional, this ones a fantastic choice. Its versatile, comfortable, and elevates every cutting task in the kitchen. ????

Real chef knives

This is a high-quality, beautiful knife. It is very sharp and even though it has a comfortable non-slip grip, it still requires extra attention when using it. The metal is thin but durable, with a lightweight build and a near one-foot length that reduces slicing time when portioning thick meat. It also arrives in a sturdy, attractive box that would make a nice gift without any additional wrapping. Since a sheath is not included, I also use this box as a handy storage container. While it is technically machine-washable, I would recommend hand washing to preserve the knife's beauty and integrity. Overall, this knife is an excellent value.

Medium Weight

This Damascus steel carving knife has quickly become one of my favorite barbecue tools. The first thing you'll notice is the appearance. It has more of a scimitar-style profile than a traditional carving knife, which gives it a distinctive look. The Damascus pattern is well executed and makes it feel like a premium piece rather than just another kitchen knife. More importantly, the sharpness is outstanding. I put it to work on a smoked brisket, and it sliced through like butter. Long, clean cuts with very little effort, which is exactly what you want when carving larger cuts of meat. It's very easy to use despite the size. The quality is also excellent. I've owned other knives from this brand, and the blade quality continues to impress. The steel feels well finished, the edge came razor sharp, and the overall fit and finish are strong. One thing I did notice is that the handle design has changed from some earlier models I own. That's mostly a cosmetic update, but worth mentioning for anyone familiar with the brand. The only practical downside is the size. This is a large carving knife, and it's too long to fit in my standard kitchen knife drawer. Not a criticism of the knife itself, but something to plan for before buying. Overall, this is a sharp, well-made carving knife that excels at brisket, roasts, and other large cuts of meat. It looks fantastic, performs even better, and has earned a permanent spot in my barbecue toolkit. Very pleased with the value for money.

First, I received this as a Vine member and we pay full income tax on the full value of the product. At the time I got this, it was 119.99 but there was a 50% coupon. Today its on sale for 79.99 but theres a $20 coupon. I would easily have skipped this over because of that (it sat for longer than normal, trust me) but Ive been spending a lot of time in another city where family moved from across country leaving most everything behind. So here we are. Items that play these pricing games are often not taken, probably as a boycott to the stupidity of it. Youre not fooling anyone and anyone can see how competitive products are priced. In fact, I have a beautiful Damascus knife at my primary residence. It wasnt 119.99. Dropped a star due to this. Some might say that I still got a deal on this knife, and I did, but my agreement (and it is work to do Vine) is to give my honest review. I would be remiss to not tell you its not a $120 knife just on a killer deal, so thats what Im doing! The knife is beautiful. Not quite as black looking as listing photos, which I was happy about actually. Its well made and seems balanced nicely. Nice to hold. It cuts well and is very sharp! I cant say yet how long that will last but I would update if it seems too quick. It did not come with a sheath so I had to get one. I wish all knives, especially sharp ones, came with one. The box it came in is nice but I dont store my knives in the box. Not handy enough. Just price it correctly - or even relatively in the ballpark - and it would have gotten 5 stars.

Great value for a 3-pc set of finely crafted Japanese-style Damascus steel knives.

Super-duper sharp right out of the box. I had to be careful un-packaging this last night because just touching the blade made me feel like I was going to cut myself. I cut up a few pieces of paper with it and was surprised at how it just glides though.

They feel heavy duty to me. I like the size and shape of the larger knife. I'm not exactly sure it's called a chef's knife based on the shape of the tip, but I will be using it as one. This will be my vegetable prep knife. The middle size knife is the santoku and it usually my goto type of blade for general things around the kitchen. Again, this one has a nice feel although it's not quite as long as my wusthof tridents. The small one is basically a paring knife and I will probably not use this one as much. Maybe for smaller things like strawberries and stuff, but that's not typically my job in the kitchen.

The only knock would maybe be the handles. They kind of feel cheap to me, like a plastic or something. I'm sure they aren't plastic, but the grip just feels a bit off to me. Maybe that's just what you get in a japanese style knife, but it will take some getting used to.

It came in a nice box and was well packaged, I'm happy with these knives and I hope they stay this sharp!

Excellent Knife Set, Worth The Money

Best knives I ever owned and I own Wusthoff, Zwilling and few very expensive Japanese knives. But lately I exclusively use these. One thing only, I wish they had good utility knife and I dont quite like the pairing knife the blade is too short.

Very high quality and beautiful knife set. makes a lovely gift

This chefs knife set is highly functional and performs exceptionally well. It quickly slices whole roasts and vegetables into even portions, making it ideal for chopping cabbage for coleslaw or sauerkraut. The knives maintain their edges effectively, and when they need sharpening, just thirty seconds on a V-type kitchen knife sharpener does the trick.

They meet and even exceed my expectations for knives of this quality. They easily slice thin pieces of meat and seafood, producing nice, uniform cuts of tomatoes, cucumbers, zucchini, and onions. Additionally, they handle cutting watermelon into chunks very efficiently. These knives are excellent for cooking requiring uniform slices or chopped ingredients.

The full-tang blades are securely attached to the handles without any looseness. My wife washes them by hand along with the regular dishes, and they have held up well without any issues. The product description is accurate, and they arrived in ten days without any problems. Overall, I am very pleased with these knives and would definitely get them again. They also make a great gift.
