Step-by-Step Cooking Instructions
1. Roast mini potatoes: Wash the potatoes and cut them in half (no peeling needed). Toss them with olive oil, salt, black pepper and one rosemary sprig until evenly coated. Preheat the oven to 200°C. Place potatoes on a baking tray with skin side up and bake for 30 minutes until crispy golden outside and soft inside.
2. Marinate salmon: Pat the salmon skin completely dry with paper towels (dry skin makes crispy skin). Squeeze fresh lemon juice on the salmon, add salt and black pepper on both sides, and marinate for 10 minutes to remove fishy taste and boost sweetness.
3. Pan-fry salmon with garlic butter: Heat olive oil in the pan on low heat. Place the salmon skin side down and fry for 5 minutes until the skin turns golden and crispy. Add sliced garlic, rosemary, butter and honey. Spoon the melted butter over the salmon repeatedly for full flavor. Flip the salmon and fry for 2 more minutes until the meat turns white and firm. Finish with a little fresh lemon juice.
4. Prepare veggies and plate: Cut broccoli into small florets. Blanch in salted boiling water for 1 minute, then soak in cold water to keep bright green and crisp. Arrange roasted potatoes on the plate, place salmon in the center, add broccoli on the side, and decorate with lemon slices and fresh rosemary.
