Dish Overview
This is a classic main dish for American family parties, Thanksgiving dinners and weekend feasts. It has crispy golden skin, tender juicy meat and a light herbal aroma. Paired with roasted vegetables, it is perfect for group meals and holiday celebrations.
Exact Ingredients (3-4 Servings)
Main Ingredient: 1 whole fresh chicken (1.2kg)
Marinade: 30ml olive oil, 30g unsalted butter, 6 minced garlic cloves, half onion, 2 thyme sprigs, 1 rosemary sprig, 2g paprika, a little sea salt and black pepper, 20g honey, 10ml apple cider vinegar
Roasted Vegetables: 2 carrots, 3 yellow potatoes, 1 purple onion
Step-by-Step Cooking Instructions
1. Prep the whole chicken: Remove chicken innards and extra tissues. Rinse the chicken thoroughly and pat the inside and outside completely dry with paper towels. Dry skin is the key to crispy roasted chicken skin.
2. Make marinade and marinate chicken: Mix melted butter, olive oil, minced garlic, chopped onion, thyme, rosemary, paprika, salt, black pepper, honey and apple cider vinegar into a smooth marinade. Coat the whole chicken evenly on the skin, chest, legs, wings and inner cavity. Stuff onion chunks and thyme inside the chicken. Cover tightly and refrigerate for at least 2 hours; overnight marinating tastes best.
3. Prepare side vegetables: Peel potatoes and cut into chunks. Cut carrots into strips and onion into large pieces. Toss vegetables with a little olive oil, salt and pepper, then spread evenly on a baking tray.
4. Two-stage roasting method: Preheat the oven to 180°C. Place the chicken on top of the vegetables with breast side up. Bake for 40 minutes to fully cook the chicken and lock in juice. Take the tray out and brush a full layer of honey butter sauce on the chicken skin. Raise the oven temperature to 200°C and bake for another 20 minutes until the skin turns golden, caramelized and crispy. Poke the thickest part of the chicken thigh — clear running juice means it is fully cooked.
5. Rest the chicken: Let the roasted chicken sit for 10 minutes before cutting. This allows meat juice to redistribute and keeps every bite tender and juicy.
Best Side Pairings & Drinks
Classic American pairings: Homemade mashed potatoes, cornbread and cranberry sauce to balance the rich savory flavor.
Cooking Tips & Common Mistakes
1. Dry the chicken skin completely for crispy results. 2. Low heat cooks the chicken thoroughly, while high heat creates a crispy golden crust. 3. Do not skip the resting step, or all meat juice will leak out.
Storage Guide
Cooked roast chicken can be refrigerated for 3 days or frozen for 15 days. Reheat in the oven at 180°C for 10 minutes to restore crispy skin.
