Product FAQs

1. How to Care for Knives on a Daily Basis

  • Hand Washing Is The Only Way to Go: The high temperatures, strongly alkaline detergents, and impact from the water jets in a dishwasher can severely damage the blade and handle.
  • Wash Immediately After Use: Rinse the knife immediately after cutting acidic foods (such as lemons or tomatoes) or foods with high salt content. Acidic substances can quickly corrode the blade, causing spots to appear even on stainless steel.
  • Dry Immediately: Do not leave the knife on a dish rack to air-dry after washing. Thoroughly dry the blade and handle with a clean cloth; this is the most effective way to prevent rust (especially critical for high-carbon steel knives).
  • Choosing a Cutting Board: Knives often become dull not from cutting food, but from striking a cutting board that is too hard. We recommend using wooden or high-quality plastic (PE/PP) cutting boards. These materials can moderately “absorb” the impact on the blade.
  • Avoid: Glass, marble, ceramic, or tempered glass cutting boards. These materials are much harder than the blade, and even a single cut can noticeably dull it.
  • Proper Storage: Avoid letting the blades knock against each other.

2. Daily Care for Wooden Cutting Boards, Knife Blocks, and Knife Racks

I. Cutting Boards

  • Washing and Drying: Hand-wash with warm water and a neutral dish soap. Never put them in the dishwasher, and never soak them in the sink. After washing, dry them with a cloth and be sure to stand them upright to air-dry. If laid flat, uneven moisture levels between the top and bottom surfaces can cause the board to warp or crack.
  • Deep Maintenance (Oiling): Every 1–2 months, when the surface of the cutting board appears white and dry, it needs to be oiled. Use only: food-grade mineral oil or specialized cutting board beeswax. Never use: olive oil, peanut oil, or other cooking oils. Over time, these vegetable oils will oxidize and go rancid, causing the cutting board to emit unpleasant odors and harbor bacteria.

II. Wooden Knife Block (Mold Prevention Is Key)

  • Prerequisite for Storing Knives: Only knives that are 100% dry should be placed in the knife block. Even a tiny bit of moisture on the blade can accumulate over time and cause mold to grow inside the block. Therefore, wipe the knives dry before placing them in the block. Clean the Slots: Every few months, turn the knife block upside down to remove dust and debris from the slots.
  • External Cleaning: Wipe the surface with a slightly damp cloth, then dry it immediately. Frequent oiling is not necessary.

III. Magnetic Knife Blocks and Strips

  • Handling Tips: The condition of the magnetic strip depends on how you handle the knives. When removing or placing a knife, flip it using the spine as a pivot so that the spine makes contact with the wood first, rather than letting the sharp blade slap or scrape directly against the wooden surface. This protects the blade and prevents deep scratches on the wood.
  • Daily Cleaning: Occasionally wipe the surface with a slightly damp cloth to remove dust and oil splatters.
  • Crack Prevention: If you live in a very dry climate, or when you’re oiling your cutting board, you can also apply a thin layer of mineral oil to the surface of the magnetic strip to maintain the luster of the wood grain.

3. The Effect of Blade Bevel Angle on Knives

Standard Bevel Angles for Kitchen Knives

Standard Kitchen Knives

Monolithic Steel: Chef’s knives (standard steel, such as 3CR, 5CR, German steel); the bevel angle for large knives is 25° ± 2, for small knives 22°–28°, and for fish knives 23°–30° (fish knives with excessively sharp edges may reach around 50°). Knives with serrated edges should be able to smoothly cut through A4 printer paper.

SG2 Steel Core, VC10 Steel Core: For chef’s knives and cleavers, the edge angle is 22° ± 2. For clad steel cleavers, the edge angle is 24°, 25°, or 26°. For utility knives under 5 inches, fruit knives, and serrated steak knives, the angle is 22°–28°.
Kitchen knife blades are 3.0 mm–4.0 mm thick (chef’s knives, Serbian style): the blade sharpening angle is 28° ± 2.
For blades with a clamped edge—such as the boning knives in the Pao series and two models of utility knives—the blade sharpening angle is controlled between 22° and 30°.

Outdoor Knives Blade thickness is 2.2 mm. Depending on the chef’s knife’s edge angle, the blade thickness is 3.5 mm, and the edge angle varies by application: the slicing knife has an angle of 34±2”, while the bone-chopping knife has an edge angle of 48°±2, capable of chopping beef shank bones.
Combined chopping and slicing knife: The blade thickness is 3.0 mm, designed for chopping at the front and slicing at the back. The sharpening angle at the front is 33° ± 2, and at the back is 46° ± 2, capable of chopping chicken leg bones and pork trotter bones (when measuring the angle, do not measure the middle, as this is where the angles of the two sides of the blade transition).
Blade Thickness for Common Materials The finished blade thickness for the large knife is 2.2±0.1 mm, and for the small knife, 1.8±0.1 mm.

The smaller the edge angle, the sharper the blade; however, it is also more prone to damage: when encountering hard objects (such as bones, hard wood, or sand), the blade is highly susceptible to chipping (curving or deformation of the cutting edge) or fracturing (cracking of the cutting edge). To achieve optimal performance, knives designed for different purposes are selected with the edge angle best suited to their specific use.

4. The Effect of Tool Hardness on Cutting Tools

If the “cutting edge angle” determines how sharp a tool is initially, then the “blade hardness” determines how long it stays sharp and what kind of damage it can withstand. However, higher hardness isn’t necessarily better; rather, it’s important to find a balance between hardness and toughness.

I. High Hardness (60 HRC and above)
Advantages:
Excellent edge retention; highly wear-resistant; remains sharp even after cutting a large volume of materials; requires infrequent sharpening; allows for a smaller bevel angle.
Disadvantages:
① High brittleness makes it prone to “chipping”; although hard, the steel is brittle. If the blade strikes bone, hardwood, or accidentally falls onto tile, a piece of the edge can easily chip off.
② Difficult to sharpen: The steel is too hard for ordinary whetstones to sharpen effectively. Once the blade becomes dull or chips, it takes a significant amount of time and specialized tools to repair it.

II. Low Hardness (Below 55 HRC)
Low hardness means the steel is relatively “soft,” but this is offset by extremely high toughness.

Advantages:
Good impact resistance; the blade is more likely to “curl” rather than “chip.” Because the material is soft, it is easy to sharpen.
Disadvantages:
Poor edge retention; it dulls quickly with even light use, requiring frequent sharpening, and cannot be sharpened to a small bevel angle.

Different steels have different standard hardness ranges: 3CR: 52–55°; 5CR: 54–57°; VG10: 58–62°

5. Distinguishing Between Damascus Patterns and Laser-Etched Textures

Key Distinguishing Features Authentic Damascus Pattern Laser-Etched Patterns
Examine The Cutting Edge The cutting edge features a smooth, solid steel core, and the pattern appears natural. The pattern may extend directly to the cutting edge, or the edge may appear extremely abrupt.
Examine The Knife Spine There are faint, layered parallel textures. Smooth and texture-free, indicating a solid, single-layer steel plate.
Symmetry of The Patterns on The Left and Right Sides The patterns on both sides are never symmetrical; rather, they are naturally formed. Often features perfectly symmetrical, mirror-image patterns.
Blade Grinding and Acid Etching Test Even after grinding away the blackened surface layer, physical texture remains visible after acid etching. The pattern rubs off easily, and the surface shows no change after acid etching.

Bought this knife on Black Friday and it’s an amazing value for what you get. It was 100 bucks but in Black Friday it was fifty percent off so I got this awesome beauty for only 50 dollars and I needed a great blade for cooking due to all my other kitchens knives being misused by family members. But this blade is extremely sharp and very durable because of that full tang. The weight is super light feeling and is very smooth and great feeling in hand. The Damascus on the blade is real and makes the knife look 10 times better even tho it might rust 10 times as fast. Overall I love this knife and I’d say if you’re looking for a full tang blade that won’t break the budget this one is it.

Very nice quality chef knife.

The quality of this chef knife is really good. It comes packaged well and has a nice premium feel to it. The blade is very sharp and easily passes the paper slicing test. The handle is also done very well and I really like this material. The handle and blade are also nicely matched and smoothed out where they meet. The blade looks awesome and does look like its the real deal. It cuts and handles very well.

Super sharp, feels good in the hand.

Reviewing FINTISO Chef Knife 8 inch, I am tired of replacing my knives every year, so Ive made a pact with myself to start ordering high quality kitchen knives that are worth sharpening so they last longer. This fit the bill.

Its a great size for cutting meat and large squash. It can cut nearly any fresh food, but it is too large for me to comfortably use it for smaller vegetables. Its sharp, so you should be careful with the blade. The grip is comfortable to hold and the design on the blade sides is a nice touch. As a normal home user, I love this knife.

Beautiful, very sharp knife

This is a very impressive looking and beautiful knife. It's very sharp and cut through my tomatoes like nothing. I have many knives, but I've never had one as beautiful as this one. It's solid and clearly has excellent craftsmanship. The list price of this knife is $120, but when I ordered it and now, while I write this review, the price is actually half that if you apply a coupon on the product page. I do believe this knife is worth a $60 price tag -- but I don't think it's worth the $120 list price. It's beautiful and works well, but I just wouldn't pay $120 for it. I do think this would be a lovely gift for a chef or an amateur chef. I'm enjoying using it.

Super sharp, nice balance

I like this 8" chef's knife a lot. It has good balance and the blade is stiff and inflexible. The overall weight makes it a good choice for vegetable prep. It was extremely sharp straight out of the box. The pattern feels and looks like it is painted on, but in the end, the aesthetics of the knife don't matter much, it's all about sharpness and utility. This product excels in both.

I got this about three weeks ago, and it's become my favorite prep knife. It has maintained an edge without the need for sharpening, so I expect just a small amount of honing will keep it sharp for a long time.

Nice product, super sharp, good balance. It's well worth the price.

Heavy and Sharp

This knife is perfect for meal prep. It is very sharp and made of highest quality stainless steel. It is full tang and very heavy. It is easy to use and is weighted just right. It even has a pattern on the blade, which isn't necessary, but is nice. This is an excellent gift for advanced and beginning chefs.

chef knife

I got these as a present for my friend who is an aspiring chef. The packaging of this knife was highly professional. But according to my friend's review, the knife is smooth as butter. It's extremely sharpened already, and the hold of the knife fits very comfortably. I don't know about the legitimacy of the knife from Japan, but it's a nice knife overall.

An Excellent Knife

My old chef knife was really bad so I checked out several knives on Amazon before I chose this one it is a great knife for chopping and slicing. It is very sharp and gets the work done fast. After reading the information sheet, I was surprised that it didn't recommend putting it in the dishwasher, so I make sure to rent to hand wash it. Overall, I am very pleased with my purchase.

Entry level chef knife

All in all a good knife, perfect as an entry level wannabe home chef like me. Make sure to take good care of it: wash and dry right after use, sharpen when it loses it sharpness, don't cut anything too hard like (chicken) bones.

A well executed chef's knife

This was purchased as a Christmas gift for my stepmom. She relies on me to sharpen her kitchen knives and I was getting tired of always hacking away at her big box store 1.4116 knives. She likes it so much that I'm looking for more nice from this brand to fill out a set for her. Truly a beautiful, well made knife. The balance is perfect. It takes a razor edge and holds it. And perhaps most importantly, it's easy to sharpen. Very nice.

VERY sturdy and SHARP

This is a hefty (but not heavy) knife, perfect for all chefs knives usages. The blade and handle are both well made. I was impressed when I opened the box. Note: I did slightly cut a finger on the back of the blade on my 1st cut. It barely touched me. I didnt know I was that close or the blade was that sharp, so be careful. I usually cant cut an acorn squash in half, but just did it. This was a good purchase! I highly recommend it.

Sharp Knife

Its an unbelievably sharp knife. This is the first quality knife Ive owned and cant believe how I cooked for years without one. I always do a few passes across a sharpening rod after every use.

Best kitchen knife ever!!!

This is the best Knife that I have ever used in the kitchen, without a doubt. Came out of the box super sharp, cuts everything like a hot knife through soft butter. Used it every day for a week and still cuts the same as day one. My other knives would had to be sharpened every other use.

So far has been great. Keeps its edge well, but future will tell. Very sharp out of package, dangerously so, which ironically makes it safer than a dull knife.

Not as luxe as they claim, but SHARP

I'm not sure about the construction of this knife-- the Damascus layer pattern doesn't look quite right, but the finish also isn't scratching off or obviously fake, so I'm not sure.

Either way, the important part is this knife is weighty, balanced nicely, and feels solid and well-made. Most importantly of all, it is SHARP, even directly out of the package, and hones nicely to a razor edge which does indicate a certain quality and hardness of the steel used.

A great knife, much better than the sets of knives you get in those dumb blocks. Don't put this one in the dishwasher, and don't sharpen it with a cheap sharpener and it'll give you a nice long life of very sharp cuts.

Extremely sharp

This knife is insanely sharp. It seems very well made. But sharpness is just unlike any knife I have ever seen. How long it will hold its edge I dont know but very impressive so far.

Beautiful and very sharp knife for the kitchen - Get it while it is on sale!!!

Not only does this look amazing, and it truly does, it also feels amazing in your hand. On top of that it is very sharp and cuts very well, not sliding off to the side. We love this knife, both my wife and I, and given how much time we both spend in the kitchen cooking.
